Hong Kong-style pineapple buns


Making the Bread

  • Flour: 300 grams
  • Milk powder: 15 grams
  • Sugar: 40 grams
  • Egg: one
  • Ice water: 130 grams
  • Yeast: 3 grams
  • Butter: 35 grams
  • Salt: 4 grams

Steps:

Step 1: Mix all ingredients except salt in a large bowl, stir well until a dough forms.

Step 2: Kneading the dough: Gradually add the butter and salt, continue kneading until the dough becomes smooth and elastic. This may take some time and effort to ensure that the butter is fully integrated into the dough.

Step 3: let rise for 1 hour, or until it expands significantly.

Step 4: Divide the dough: Divide the fermented dough into appropriately sized portions for later use.

Pineapple Puff pastry
  • Butter: 60 grams
  • Sugar: 50 grams
  • Egg: one
  • Milk powder: 15 grams
  • Flour: 110 grams
  • Baking soda: 2 grams
  • Baking powder: 2 grams
Steps:

Step 1: Mix the butter, sugar, whole egg liquid, powdered milk, flour, baking soda and baking powder. Stir well to form a puff pastry.

Step 2: Wrap the dough: Wrap the puff pastry over each divided dough block, making sure the dough is completely wrapped in the puff pastry.

Step 3: Place the covered dough and let rise for 40 minutes, or until they swell again.

Step 4: Bake in a preheated oven at 180C/350F for 20 minutes, or until the bread is golden brown and cooked through.
